Keto “Carrot” Cake

Okay, this mug cake technically isn’t a carrot cake as it does not have carrots. But it does taste exactly like a carrot cake! This is an awesome and easy recipe that will definitely curb your craving for something sweet!

Ingredients:

4 tbsp almond flour
4 tsp stevia
1 tbsp butter
1 tbsp cream cheese
2 tsp vanilla extract
1 egg
1/4 tsp cinnamon

Instructions:

Cake
1. Spray non-stick spray in mug, or coat with butter
2. Add almond flour to mug
3. Add 1/2 tbsp of butter
4. Add 1 tsp vanilla
5. Add 3 tsp stevia
6. Add egg
7. Mix well
8. Cook for 1 minute and 30 seconds in microwave
9. Follow the Frosting steps below.

Frosting
1. Set out butter and cream cheese and let it soften a little
2. In a separate bowl, add cream cheese
3. Add the other 1/2 tbsp of butter
4. Add vanilla
5. Add the remaining 1 tsp of stevia
6. Mix well
7. Cut the cake in half to make 2 small cakes, then spread the frosting over both pieces
8. Enjoy!
